Maison Noir “Knock on Wood” Chardonnay, Willamette Valley

Knock on Wood is about Chardonnay seen through the lens of Chablis. It sees no oak and no malo-lactic fermentation. A long, cold fermentation mimicks the natural conditions of Northern France. The result is a wine with racy acidity, tart crisp fruit and a mineral backbone.
