Foresti Rossese di Dolceacqua, Liguria

Rossese di Dolceacqua is the definitiive Ligurian red: charmingly aromatic, savory, herbal. It is made in the manner of a natural wine, organically farmed, vinified with native yeasts and no CO2 added. From a defined zone at the extreme edges of western Liguria close to the border of France, a limited number of vines continue to be cultivated in the ancient way. Foresti sources from a few top vineyards from the coastal town of Ventimiglia, and inland along the Torrente Nervia River to the village of Dolceacqua. Pair with coastal-inspired dishes such as fresh fish with pesto, pasta with a puttanesca sauce, dishes with capers and anchovies

Varietals: 100% Rossese of Ventimiglia

Vineyards: Ventimiglia; calcareous sands on steep, well-drained slopes

Farming: Organic

Vinification: Maceration on skins; temperature-controlled fermentation at 30 degrees for about 10 days

Aging: Maturation in stainless steel tanks for 8 months and in bottle for 3 months before release
