Wines
Under third-generation Simone Cecchetto, Cà di Rajo is a quality leader in Prosecco, winning notable awards including “best prosecco superiore” in a 2020 Decanter blind tasting.
Being focused on quality, Cà di Rajo has been well placed to take advantage of sweeping changes to Prosecco regulations introduced in 2009. First, “Prosecco” became an internationally-protected name, whereby only wines from Italy’s official zones could be labeled “Prosecco.” Second, the rules created specific quality tiers of Prosecco: The Conegliano Valdobinbiadene area, where Cà di Rajo has 15 ha planted, was officially upgraded from DOC to DOCG, Italy’s highest quality designation; and the surrounding IGT production areas, where Cà di Rajo has 25 ha, were upgraded to DOC (permissible yields were reduced by 1/3).
Cà di Rajo showcases its quality edge by producing Proseccos from the best zones and offering a “millesimo” bottling, a significant differentiator in a category dominated by non-vintage wine.
While some Prosecco producers are experimenting with newer vinification methods, Cà di Rajo prefers innovating within the Charmat method— e.g., through longer, slower vinification—which they feel produces a finer creaminess and perlage.
Symbolizing its commitment to heritage, Cà di Rajo maintains historic vineyards with bellussera trellising, an ancient, beautiful configuration of diamond patterns that risks extinction due to its labor-intensive design.
