Instead of using the high-yielding Grenache clones most common in California, Mathis insisted on a low-yielding, Heirloom clone from Beaucastel by route of Tablas Creek. The small berries produce concentrated flavors that evoke the food-friendly style that Mathis loves. The tradeoff is that the berries make less wine, a sacrifice only a sublimely-choosy rosé vigneron would make.

With such excellent soils and Grenache vines, Mathis tends his vineyard to perfection. He farms organically with biodynamic practices like rotating cover crops and planting between rows. Which means, he's almost always in the vineyard, on the tractor or working by hand.

Finally, Mathis Rosé de Grenache 2023 is a "dedicated" rosé--a rosé made from vines that are purposely grown to make only rosé. This is a huge distinction from many other rosés made in the "saignée" method, where grapes are used primarily for a red wine and the "leftovers" bottled as rosé. Mathis makes his rosé in a direct-to-press method, where the grapes are used only for this wine.
